Green,refreshing salad

 

Hello Beautiful people!

Today I wanted to share with you this delicious and fresh salad. Something easy to prepare and refreshing for this spring weather (I live in Texas and it sure is hot) When you get home and you are in the mood to prepare dinner, yet, you do not want to turn on the stove or oven because it gets too hot. A salad is the best choice J! I found this recipe in the “We like it raw” website ,by Russell James,

I assure you this tastes fantastic!   Here we go… Ready, set, go! 

Salad Ingredients

  • 4 handfuls greens such as rocket, watercress and chard
  • 2 handfuls torn spinach
  • 1 tablespoon fresh mint
  • ½ cup baby tomatoes cut into quarters
  • 1/2 a cucumber, diced
  • 1 red pepper, sliced or diced
  1. Combine all ingredients in a large bowl
  • 1 avocado cut into a fan
  • 1 tablespoon lemon juice
  • 2 teaspoons olive oil

Salad Directions

  1. Just before serving toss the salad with the lemon juice and olive oil.
  2. Cut the avocado and place on top of the salad.


Dressing Ingredients

  • 1/2 cup cashews
  • 1/4 cup water
  • 2 tablespoons fresh tarragon
  • 1/2 clove garlic
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon lemon juice
  • 3 tablespoons olive oil
  • Water as needed to blend

Dressing Directions

  1. Blend all ingredients in a high-speed blender until smooth.
  2. Pour over salad when ready to serve.

Pear & Mint Dressing (Alternative dressing)

Dressing Ingredients

  • 2 ripe pears
  • Small handful fresh mint
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon salt
  • 1/4 cup cashews
  • 3 tablespoons olive oil
  • Water as needed to blend

Dressing Directions

  1. Blend all ingredients in a high-speed blender.

Baked Chicken breasts, Delish!


  • Here is what you need:
  • 1-3 chicken breasts( or as many as desired)
    • ¼- ½  cup of melted butter.
    • 1 -1 ½ teaspoon of seasoned salt, or desired condiment ( I use lemon pepper)
    • Oven
    • Aluminum pan
    • Hunger and much love!
  • Directions 
  • Preheat oven to 400°F
  • Spray your pan with cooking spray or pour a small amount of melted butter and with a cooking brush, or a napkin cover the bottom slightly. ( less butter, the best)

 

H2O – How much water do you drink?


 Many of us tend to drink soda and other sweet drinks when we get thirsty; forgetting that water is our number one form of healthy drink and hydration that we can have.

But, why is water good for our body?  Did you know that water can help you with weight-loss and energy along with other positive effects in your body.

By saying water can help you with weight-loss I do not mean doing the extreme water diet, in which you do nothing else but drink water for three days. NO, NO, NO.

H2O is a fantastic form of hydration, and the best thing … it contains zero calories. By replacing sodas, juice, liquor, or any other type of sweet drinks with water you are minimizing the calorie intake per day. Peanut, Peanutty, Peanuts!

Hello there!

Last week I promised the recipe for the peanut sauce that goes perfect with the delicious spring rolls!

Well, today is the day! But before I give you the recipe let me tell you a few facts:

Did you know . . .

  • That peanuts can help you lose weight?
  • Peanut are legumes related to beans that are packed with protein and fiber. These delicious and tasty legumes contain a fat [good fat] that allow you to control hunger and cravings.

  • And… They are rich in vitamins. Peanuts and peanut butter contain B-vitamins, folate and Vitamin E.

Simple, fresh and delicious Spring Rolls!

We all know that fast foods are bad for your health, but what if there was a food that was fast to prepare and healthy? Well, guess what!  There is!

Spring Rolls are knows as an appetizer in Asian culture, they can either be fried or steamed; it all depends of the culture and taste. You can prepare these to be complete vegetarian or add your favorite meat and noodles.
